17日粮维生素E添加阶段对猪肉质的影响显示文摘日粮添加维生素E能抑制脂类氧化。试验研究日粮维生素E(VE)添加水平和饲喂持续时间对猪肉质和脂类氧化的影响。选用81头猪分为3组,3组VE的添加量分别为40,200,400IU·kg^-1日粮,每组分为3个饲喂阶段(3,6,和9周)。屠宰后测定屠体性状和肉质,样品冷冻后测定氧化指标。结果表明:日粮中添加VE不影响猪生长性能;滴水损失随日粮VE添加量的增加而减小(P〈0.05);VE饲喂期的延长能改良猪肉的pH值和滴水损失(P〈0.05)。饲喂高含量VE可减少脂类氧化(P〈0.05)。饲喂期从3周延长到9周时,新鲜或熟猪肉氧化力降低(P〈0.05)。冷冻后,日粮添加VE200,400IU·kg^-1组猪肉脂类氧化力低于VE40IU·kg^-1日粮添加组(P〈0.05)。同样,VE饲喂期为6周组脂类氧化力低于饲喂期为9周组。日粮添加VE,中性脂肪酸转化为不饱和脂肪酸的效率提高(P〈0、05)。本试验结果表明:日粮VE添加量的增加、饲喂期的延长可降低猪肉滴水损失和脂类氧化,VE添加量为200IU·kg^-1日粮、饲喂期为6周对猪肉脂类氧化和猪肉质最有利。Guo Q Richert B T Burgess J R Webel D M Orr D E Blair M Grant A L Gerrard D E 2007饲料博览(技术版)2007,,1:0
