| 1 | Analysis of the changes of volatile flavor compounds in a traditional Chinese shrimp paste during fermentation based on electronic nose,SPME-GC-MS and HS-GC-IMS显示文摘Traditionally fermented shrimp paste has a long fermentation period and is susceptible of external factors,which leads to unstable quality and limits its development and application.Therefore,the purpose of this study is to analyze the flavor changes in the shrimp paste fermentation process and screen out the key volatile aroma components in the shrimp paste to control the flavor quality of the shrimp paste products.The overall odor profile was detected by the electronic nose.A total of 106 volatile flavor compounds in the shrimp paste samples at different fermentation stages were identified by solid-phase microextraction-gas chromatography-mass spectrometry(SPME-GC-MS)and headspace-gas chromatography-ion mobility spectrometry(HS-GC-IMS).The main aroma components alcohols,aldehydes,pyrazines and other substances in the fermentation process showed an overall upward trend.A total of 17 key volatile aroma components in shrimp paste at different fermentation stages were identified by the relative aroma activity value(ROAV)method.The combination of electronic nose,SPME-GC-MS and HS-GC-IMS could comprehensively reflect the changes of volatile components in shrimp paste at different fermentation stages,which helps to further understand the mechanism of shrimp paste flavor formation and provides a basis for the regulation of the flavor quality of shrimp paste products. | Ying Li Li Yuan Huijie Liu Hongying Liu Yue Zhou Miaonan Li Ruichang Gao | 2023 | Food Science and Human Wellness2023,12,1: | 16 |
| 2 | Investigation of Solidification and Segregation Characteristics of Cast Ni-Base Superalloy K417G显示文摘Differential scanning calorimetry(DSC) analysis, isothermal solidification experiment and Thermo-Calc simulation were employed to investigate solidification characteristics of K417 G Ni-base superalloy. Electron probe microanalysis(EPMA) was employed to analyze the segregation characteristics. Liquidus,solidus and the formation temperatures of main phases were measured. In the process of solidification,the volume fraction of liquid dropped dramatically in the initial stage, while the dropping rate became very low in the final stage due to severe segregation of positive segregation elements into the residual liquid. The solidification began with the formation of primary γ. Then with solidification proceeding, Ti and Mo were enriched in the liquid interdendrite, which resulted in the precipitation of MC carbides in the interdendrite. Al accumulated into liquid at the initial stage, but gathered to solid later due to the precipitation of γ/γ’ eutectic at the intermediate stage of solidification. However, Co tended to segregate toward the solid phase. In the case of K417 G alloy, combining DSC analysis and isothermal solidification experiment is a good way to investigate the solidification characteristics. | 3 | Temporal and spatial variations of stem CO_(2) efflux of three species in subtropical China显示文摘Aims Although stem CO_(2) efflux is critical to ecosystem carbon and energy balance and its feedback to future climate change,little information is available on stem CO_(2) efflux and its responses to temperature,especially in subtropical China.This study aims to(i)evaluate the temporal and spatial variations of stem CO_(2) efflux of three species,including oak(Quercus acutissima Carr.),masson pine(Pinus massoniana Lamb.)and loblolly pine(Pinus taeda Linn.)in subtropical China and(ii)analyze the temperature sensitivity of stem CO_(2) efflux in the three species based on 2-year field measurements.Methods We measured stem CO_(2) efflux and stem temperature(at 3 cm depth)of the three species using the horizontally oriented soil chamber technique from September 2008 to August 2010.We also conducted a 24-h measurement to examine the diurnal variation of stem CO_(2) efflux in three consecutive days in April 2009.Important findings The temporal dynamics of stem CO_(2) efflux followed the change of the stem temperature in a 3-cm depth with a bell-shaped curve in the three species.Stem temperature explained 77–85%of the seasonal variations of stem CO_(2) efflux over the entire study period in the three species.The temperature sensitivity(Q_(10))of stem CO_(2) efflux was obviously different among the three species with higher Q10 value found in oak(2.24)and lower values in the coniferous species(1.76 and 1.63).Our results also showed that the Q10 values of stem CO_(2) efflux in all the three species were lower in the growing season than that in the non-growing season,indicating that the growth and maintenance respiration had different temperature responses.Moreover,we found that the temperature-normalized stem CO_(2) efflux(R_(10))changed greatly between the growing and non-growing seasons in oak and masson pine,but not in loblolly pine.Additionally,we also found that in the non-growing season,the principal factor responsible for the spatial variation of stem CO_(2) efflux among the 15 sampling trees was sapwood volume,whereas in the growing season,stem CO_(2) efflux was closely related to annual dry-matter production in the three subtropical species. | Qingpeng Yang Ming Xu Yonggang Chi Yunpu Zheng Ruichang Shen Peixue Li Huitang Dai | 2012 | Journal of Plant Ecology2012,5,2: | 7 |

| 5 | Terrestrial behavior and use of forest strata in a group of black-and-white snub-nosed monkeys Rhinopithecus bieti at Xiaochangdu,Tibet显示文摘Food distribution and predation pressure are considered to be the main ecological factors that influence the use of forest strata(basically arboreality vs.terrestriality)in non-human primates.Here,we investigate ground use of wild,unprovisioned black-and-white snub-nosed monkeys Rhinopithecus bieti by means of the scan sampling method.The results show that the monkeys spent 15.0% of the day time on the ground;16.6%,12.7%,and 15.6% for adult males,adult females and juveniles,respectively.Adult males and juveniles of both sexes showed significantly higher rates of terrestrial time than adult females.Females without clinging infants spent significantly more time on the ground than expected,while females with clinging infants spent significantly less time on the ground than expected.These results suggest that the higher degree of terrestrial behavior for males and juveniles may be due to their higher agility in comparison with females.Our study showed that the monkeys fed more on lichens relative to other food items when in the trees,but more on buds/leaves,flowers,fruits/nuts,resin/bark,and herbs when on the ground.According to our investigation,the ecological significance of the species' terrestriality lies mainly in the utilization of terrestrial food | Zuofu XIANG Sheng HUO Wen XIAO Ruichang QUAN Cyril C.GRUETER | 2009 | Current Zoology2009,55,3: | 7 |
| 6 | Peptide fraction from sturgeon muscle by pepsin hydrolysis exerts anti-inflammatory effects in LPS-stimulated RAW264.7 macrophages via MAPK and NF-κB pathways显示文摘Previous studies have suggested that polypeptides extracted from milk, soybean, fish, eggs, and meat possess potential anti-inflammatory effects. To date, few studies have reported the anti-inflammatory function of sturgeon peptides and their underlying mechanisms are unknown. The current study was therefore to determine the anti-inflammatory potential of sturgeon peptides with lipopolysaccharide (LPS)-induced RAW264.7 inflammatory model. Pepsin hydrolysate (PeH) was purified by ultrafiltration and Sephadex G-15 gel filtration chromatography. PeH significantly reduced the inflammatory mediator (NO) and inflammatory cytokines (IL-6, TNF-α and IL-1β) expression in a dose-dependent manner. Moreover, the purified sturgeon peptide (F2) possessed strong antioxidant potential and effectively inhibited DPPH and ABTS free radicals. | 9 | Vertical Distribution of Soil Nematode Communities under Different Tillage Systems in Lower Reaches of Liaohe River显示文摘Vertical distribution of soil nematode communities under conventional tillage (CT),no-tillage (NT) and fallow field (FF) treatments in the Lower Reaches of the Liaohe River was investigated at six soil depths (0-5 cm,5-15 cm,15-30 cm,30-50 cm,50-75 cm and 75-100 cm). The results show that total nematode abundance gradually decreases with depth,and the highest number of total nematodes is observed at 0-5 cm depth under NT and FF treatments. The number of fungivores and plant parasites is significantly higher under FF and NT treatments than under CT treatment at the 0-5 cm depth. There is significant soil depth effect on the abundances of bacterivores and omnivores-predators,which exhibits a similar trend to that of total nematodes; whereas,no significant tillage effect is found. Tillage effect on soil nematode communities can be reflected by values of relative tillage response of index V. | 10 | Correlation between dominant bacterial community and non-volatile organic compounds during the fermentation of shrimp sauces显示文摘Shrimp sauce,one of the traditional salt-fermented food in China,has a unique flavor that is influenced by the resident microflora.The quality of salt-fermented shrimp sauce was evaluated in this work by determining the total volatile basic nitrogen(TVB-N),the amino acid nitrogen(AAN),organic acid,5’-nucleotide and free amino acids(FAA).Moreover,the dynamics of microbial diversity during processing was investigated by using high-throughput sequencing technology.The results showed that the AAN,TVB-N,organic acid,5’-nucleotide and FAA content were in range of 0.93-1.42 g/100 mL,49.91-236.27 mg/100 mL,6.65-20.68 mg/mL,3.51-6.56 mg/mL and 81.27-102.90 mg/mL.Among the microbial diversity found in the shrimp sauce,Tetragenococcus,Flavobacterium,Polaribacter,Haematospirillum and Staphylococcus were the predominant genera.Correlation analysis indicated that the bacteria Tetragenococcus and Staphylococcus were important in the formation of non-volatile compounds.Tetragenococcus positively correlated with a variety of FAAs;Staphylococcus positively correlated with 5’-nucleotides.The analysis indicated that Tetragenococcus and Staphylococcus were the core genera affecting non-volatile components.These findings indicate the dynamics of the bacterial community and non-volatile components inter-relationships during shrimp sauce fermentation and provide a theoretical basis for improving the fermentation process of shrimp sauce. | Ruichang Gao Huijie Liu Ying Li Hongying Liu Yue Zhou Li Yuan | 2023 | Food Science and Human Wellness2023,12,1: | 2 |

| 13 | Application of Mn(Ⅱ) as a Mimetic Enzyme of Horseradish Peroxidase显示文摘In this study, Mn(Ⅱ) as a mimetic enzyme of horseradish peroxidase (HRP) was applied to the determination of hydrogen peroxide (H2O2). The method introduced in this paper is based on Mn(Ⅱ)’s catalytic effect on the oxidation of 4-aminoantipyrine(4-AAP) with modified Trinder’s reagent N-ethyl-N-(2-hydroxy-3-sulfopropyl)-3, 5-dimethoxyaniline(DAOS) by H2O2. By coupling this mimetic catalytic reaction with the catalytic reaction of glucose oxidase (GOD), glucose can be detected. Under optimum conditions, the calibration graphs for the determination of H2O2 and glucose are in the range of 1.0×10-3?1.0×10-1 mol/L and 1.0×10-3?14×10-3 mol/L respectively. The detection limit is 5.9×10-4 mol/L for H2O2 and is 9.2×10-4 mol/L for glucose. The feasibility of Mn ( II ) as a HRP mimetic enzyme in practical clinical analysis has been proven in the determination of glucose in human serum. | 14 | Study on the Tripolyphosphatase (TPPase) Property of Bighead Carp (Aristichthys nobilis) Myosin Subfragment-1显示文摘Myosin subfragment-1 was prepared from the myofibrils of bighead carp (Aristichthys nobilis). The myosin subfrag- ment-1 was proved to have the activity of tripolyphosphatase (TPPase) responding to the hydrolysis of sodium tripolyphosphate (STPP). The optimum temperature and pH for the TPPase of myosin subfragment-1 were 30℃ and pH 5.0, and at pH 8.0 the TPPase also showed a high activity. Mg2+ was necessary to TPPase. The TPPase activity of myosin subfragment-1 was activated by Mg2+ under low concentrations, but was inhibited when the concentration was over 17 mmolL-1. The TPPase activity was also affected by KCl. The optimum concentration of KCl for TPPase was 0.3 molL-1 under the condition of 17 mmolL-1 Mg2+. The TPPase activity was significantly inhibited by EDTA-Na2. Reagents such as KBr, KI and KIO3 could inhibit the TPPase effectively. K2Cr2O7 as well as KMnO7 and KNO3 exhibited weak inhibiting effects.
