11糖代谢物抑制与氮源结构复杂性的相互关系对酵母生长和发酵的影响显示文摘在含有半乳糖、铵盐(磷酸铵)、氨基酸(酪蛋白氨基酸)和多肽(蛋白胨)的培养基中,工业化啤酒酵母生物量和乙醇的产生受到氮源结构复杂性的强烈影响.当半乳糖浓度较低时,可观察到双峰生长现象,且不受氮源的影响.但糖浓度较高时,半乳糖利用的方式有所改变.酵母菌生物量的积累和乙醇的产量依赖于氮源的性质,且面包酵母与Ale酵母、Lager酵母之间的生物量积累和乙醇产量也不同.面包酵母在含有酪蛋白氨基酸的培养基中表现出较高的半乳糖发酵性能.Ale酵母在含有蛋白胨和酪蛋白氨基酸的培养基中积累的生物量很高,而只有在含有酪蛋白氨基酸的培养基中才会大量产生乙醇.相反,Lager酵母在以有蛋白胨为氮源的培养基中积累的生物量较多,且产生较多乙醇.而铵盐却降低了酵母的性能.实验结果表明,以多肽形式存在的氮源对于酵母代谢更加有利,这些结果因半乳糖、葡萄糖和麦芽糖而不同,这说明,在含有不同结构复杂性氮源的培养基中,糖代谢物抑制在酵母性能方面扮演着一个中心角色.Sandra Helena da Cruz Margareth Batistote Jose Roberto Emandes 林文 杨毅 2004啤酒科技2004,,12:1
