| 1 | Processing stage-guided effects of spices on the formation and accumulation of heterocyclic amines in smoked and cooked sausages显示文摘Heterocyclic amines (HAs) could be generated though sausage processing.The results showed that garlic,black pepper,chili inhibited the formation of HAs (584.29 ng/g,613.11 ng/g,677.23 ng/g) whereas ginger and Sichuan pepper intensified (965.66 ng/g,916.59 ng/g) compare with control sausage 863.86 ng/g.Furthermore,the study showed that garlic,black pepper,chilli all inhibited the formation of total HAs at stage of raw,drying,baking and steaming and had different inhibitory effect at every stage.Black pepper had the best inhibitory effect across four stages and inhibition rate reached 65%,69%,66%,84% after each stage.Chilli was the only one had inhibitory effect on both free and protein-bound HAs at every stage and inhibition rate about free and protein-bound HAs reached 38% and 76% in finished sausage.Adding certain spices properly during processing would be helpful to obtain fewer HAs in sausage. | Diaodiao Yang Zhiyong He Zhaojun Wang Qin Fang Fatih Oz Jie Chen Maomao Zeng | 2022 | Food Bioscience2022,47,3: | 2 |

| 4 | Microstructure Characteristic of In-situ Ti/TiC Composites显示文摘TiC reinforced titanium composites has been produced with different Al content and C content by XDTM. The results have shown that TiC particles are of two different morphologies f coarse dendritical primary TiC and short bar-shape eutectic TiC. Al content has great effects on the morphology of TiC. With the increasing of Al content, the morphology of primary TiC changes from coarse developed dendrite into short bar-shape or plate--shape TiC with 35%Al. Meanwhile, the structure of the matrix changes from single Ti to Ti and Ti3Al, and to Ti3Al and TiAl. However, the C content has no influence on the microstructure of matrix. When the C content is less than 1.2%, the dendrite TiC disappears and only short bar-shape or plate-shape TiC exists in the composites. | 7 | Chemical Synthesis of an Octasaccharide Derivative Related to Group B Streptococcus Cell-Wall Polysaccharide显示文摘Group B Streptococcus(GBS)is the major pathogen that causes invasive infectious diseases in neonates and infants.The develop-ment of preventive and therapeutic strategies against GBS infection has been becoming the most pressing subject worldwide.Group B carbohydrate(GBC),the group B-specific polysaccharide that distinguishes GBS with other streptococci species,has been identified as an attractive antigen for diagnosis and vaccine development because of its highly conservative tetra-antennary structure.In this paper,a highly convergent[3+5]glycosylation strategy for efficient synthesis of an octasaccharide derivative related to GBC oligo-saccharide unitⅡhas been developed.In this synthesis,each glycosylation reaction was efficiently constructed with glycosyl im-idates,especially trifluoroacetimidate,as donors,and each glycosidic bond was stereoselectively controlled via the neighboring group participation effect of acyl group on the 2-O-position of imidate donors or the solvent effect of Et_(2)O.Furthermore,the ami-noethylphosphate group was smoothly installed on the 6-O-position of D-glucitoll residue using the phosphoramidite method.After global deprotection,the target octasaccharide was successfully obtained from o-glucitol in 29 steps with an overall yield of 1.37%.The free amino group installed on the aminoethylphosphate spacer of the target molecule enables its modification with functional-ized biomolecules for further biological studies. | Chongzhen Sun Zhaojun Liu Wuxian Zeng Xiaolin Ma Guirong Wang Guofeng Gu | 2023 | Chinese Journal of Chemistry2023,41,2: | 0 |
| 8 | Study on Cisplatin Aggravating DNA Damage and Causing a High Apoptosis Rate on Breast Cancer MCF-7 Cells显示文摘[Objectives] To investigate the mechanism of DNA damage of cisplatin( DDP),a broad spectrum anticancer drug on breast cancer MCF-7 cells,and to study the mechanism of apoptosis induced by DDP.[Methods]MCF-7 cells were treated by DDP( 0 mg/L,2 mg/L,4 mg/L,6 mg/L,6 mg/L,and 10 mg/L) for 48 hours. MTT assay was used to detect the inhibitory effect of DDP on MCF-7 cells and IC50 value was calculated. Western blot was adopted to detect the expression of γ-H2 AX,which was the marker of DNA double stranded breaks( DSBs) and ATM( sensory molecules of DSBs),the apoptotic signal transduction molecule cleaved caspase-3,and the proteins associated with apoptosis calpain.[Results]DDP inhibited MCF-7 cell activity in a concentration-dependent manner and IC50 was 7. 57 mg/L. In contrast to the control group( without DDP treatment),MCF-7 cells with DDP treatment expressed more γ-H2 AX,ATM,cleaved caspase-3 and calpain.[Conclusions] DDP could inhibit the activity of breast cancer MCF-7 cells.
